Luckily, you don’t need to sacrifice your fitness, nutrition, time, or health goals with this healthier, natural version of the trendy Sunrise Hawaiian Mimosas.
While you may come across other healthy mimosas, these beauties have delicious tropical layering made without artificial colors/syrups! No grenadine is needed, and all the flavor and tropical ombre layering is made with vibrant hibiscus.

Sunrise Hawaiian Mimosas (previously called Island Breeze Mimosas)
After seeing beautiful tequila sunrises and Hawaiian Mimosas all over Pinterest, I knew I needed to find a way to make the gorgeous, layered cocktails a part of my healthy brunch. While other similar-colored drinks are loaded with refined sugar and artificial colors and hard liquor, I decided to make this healthier version light & refreshing with my favorite brunch essential; champagne!
This clean-eating/drinks recipe is easy, beautiful, and oh-so-refreshing. If one mimosa isn’t enough (and it rarely is), you can also make these in larger glasses for a sparkling party punch.
Ingredients
This recipe calls for a hibiscus simple syrup for its beautiful red layer. Only three simple ingredients are needed: ½ cup water, 2 tablespoons hibiscus pieces, and ½ cup sugar.
For the remainder of the drinks, you’ll want: 1 bottle of champagne (extra dry or brut), 16 ounces orange juice, 20 ounce can pineapple cubes (only need the juice), 1 starfruit, cut into slices (optional garnish), and champagne glasses for serving.
How to Make Hawaiian Mimosas with the Perfect Ombre Layering
For this recipe to turn out, the layers have to be done in a certain order. Begin with making the hibiscus simple syrup (see recipe below for details).
The rest is all layering! Gather 8 champagne glasses. Fill each glass in the following order: 4/5 full of champagne, most of the rest of the way up with orange juice and pineapple juice, and then a splash of hibiscus syrup. Garnish with a star fruit slice (optional).
Make Larger Cocktails or a Party Punch/Party Pitcher
How much does this recipe serve? This recipe typically makes 8 mimosas.
For larger servings, you can make 4 cocktails in a cocktail glass. Or serve the drink in a large punch bowl or pitcher for a party punch. Make sure to follow the layering order listed in the recipe for the beautiful ombre look.
Make in Advance/How to Serve
While these mimosas cannot be made in advance, the simple syrup can be prepped in advance and stored in the refrigerator. This allows for the mimosas to be assembled on the day of brunch in minutes! Most people prefer this recipe served in mimosa glasses, but you can also make larger cocktails or a party pitcher if desired.

Ingredients
(Hibiscus simple syrup)
- ½ cup water
- 2 tablespoons
dried hibiscus - ½ cup
organic sugar (optional)
(Drinks)

Instructions
- Make the hibiscus simple syrup. Begin by bringing the water to a boil. Remove from heat. Add hibiscus flowers and allow them to steep in the water for 10 minutes. Strain. Stir in sugar. Allow to cool.
- Gather 8 champagne glasses (for mimosas) or 4 larger cocktail glasses for sparkling party punch. Fill each glass in the following order (ORDER DOES MATTER, if you don’t follow this, they won’t turn out): 4/5 full of champagne, most of the rest of the way up with orange juice and pineapple juice, and then a splash of hibiscus syrup.
- Garnish with a star fruit slice. Bottoms up!
Notes
*For those trying to be healthier, you are welcome to make the hibiscus tea without sugar. It won’t taste as good to those used to sugary cocktails, but it’s still refreshing <3.
