Apple Crisp with Almond Flour

This easy apple crisp is made with almond flour and free of gluten, grains, and dairy. It’s warm, crispy, and delicious.

Ingredients

(Apple Filling)

  • 6 cups baking apples, peeled, cored and sliced
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon thickener: arrowroot, tapioca flour, or corn starch
  • 1 teaspoon ground cinnamon
  • 3 tablespoons water

(Crumble Topping)

  • ½ cup gluten free old fashioned oats
  • ½ cup almond flour
  • 2/3 cup packed organic brown sugar
  • ½ teaspoon baking powder
  • 1/3 cup butter (vegan if needed) , softened
  • Optional, non-dairy ice cream for topping
  • Optional, non-dairy caramel for topping

Instructions

  • Preheat the oven to 375°F.
  • In a 9x13 baking dish add apple slices. In a small bowl, mix brown sugar, lemon juice, thickener ground cinnamon, and water. Sprinkle over the apple slices and toss.
  • In a large bowl, combine oats, almond flour, brown sugar, and baking powder. Mix with a fork. Add butter and using clean fingertips, rub butter into dry mixture until it’s in small crumbles. Sprinkle over apples.
  • Bake for 35-40 minutes or until golden brown and apples are bubbly. Allow to cool for 15-30 minutes prior to serving. Serve with a scoop of ice cream if desired.

Notes

*For an extra crispy topping, remove from the oven five minutes early, lightly spray the top with a healthier non-stick cooking spray (I used coconut oil). Then return to the oven for the remainder of the baking time.
*This recipe makes a brown and crispy topping, but it is pretty thin (as shown in the photos). For a thicker crumble, if not watching your carbs, feel free to double the ingredients in the crumble topping. If your apples are on the smaller side, the current amount should be about right. However, I did do a batch with larger apples and the topping wasn’t quite enough.
