Bars
- 1 cup 2 sticks butter, melted
- 1½ cups packed brown sugar
- 2 eggs
- 2 teaspoons grated orange zest
- 1 teaspoon vanilla extract or almond
- 2 cups gluten free all-purpose flour
- ½ teaspoon sea salt
- 1 teaspoon baking powder
- 1 cup white chocolate chips
- ¾ cup dried cranberries
FROSTING/TOPPING
- 8 ounces cream cheese softened
- 2 teaspoons grated orange zest
- 1½ cups powdered sugar sifted
- Splash vanilla extract or almond
- 1 cup white chocolate chips melted
- ¾ cup dried cranberries roughly chopped
Preheat oven to 350°F. Line a 9x13 pan with parchment paper.
Use an electric mixer on low to beat together: butter, brown sugar, eggs, orange zest, and extract. Stir in flour, salt, and baking powder just until mixed. Fold in chocolate chips and craisins.
Add to pan. Bake for 18-22 minutes or until the edges are golden brown. Remove from oven and allow to cool.
Make frosting/add topping. Beat together cream cheese, orange zest, powdered sugar, and extract. Spread over cooled bars. Sprinkle with dried cranberries. Drizzle white chocolate over top. Refrigerate for 30-60 minutes to harden. Cut and enjoy!
