Gluten Free Peach Cobbler

- 8 fresh peaches - peeled, pitted, and sliced into wedges
- ½ cup white sugar, divided
- ½ cup brown sugar, divided
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons arrowroot powder (or cornstarch), or extra depending on desired filling thickness
- 1 cup 1-to-1 all-purpose gluten free baking flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 6 tablespoons unsalted butter, chilled, cut in small pieces (dairy free or vegan if desired)
- ¼ cup boiling water

- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
Preheat oven to 425°F.
In a large bowl, add peaches, ¼ cup white sugar,¼ cup brown sugar, cinnamon, nutmeg, lemon juice, and arrowroot. Stir gently until combined. Add to a 2-quart baking dish. Bake for 10 minutes. Remove from oven.
While baking, in a large bowl, add gluten free flour, remaining white and brown sugar, baking powder, and salt. Blend in butter with a pastry blender until mixture is coarse. Stir in water until just combined.
Drop topping in spoonfuls over peaches.
Mix white sugar and cinnamon together in a small bowl; sprinkle over cobbler.
Bake until topping is browned/golden, about 30 minutes.
