Hidden Veggie Paleo Meatballs
This dinner is flavorful, healthy, and loaded with lots of good-for-you ingredients! Try these meat patties out for a decent helping of vegetables when you’re not a huge fan of the taste of vegetables. In addition to the amount of vitamins and minerals crammed into these meat patties, turmeric and lots of coconut are used for their anti-inflammatory properties. Healthy, not much work, and taking less than 30 minutes, this recipe makes for a quick paleo (autoimmune protocol compliant) main dish.

- 1 large or 2 small zucchini
- 3-4 carrots peeled
- 6-8 garlic cloves peeled
- 2 lbs turkey or beef
- 2 eggs for AIP substitute ½ cup mushed ripe plantain
- 1 medium onion minced
- 2 teaspoons sea salt
- 1 teaspoon turmeric
- ½ cup coconut oil divided
- Fresh cilantro chopped (optional)
- Coconut aminos optional
Cut zucchini and carrots into large chunks. Add zucchini, carrots, and garlic cloves into a food processor. Blend until only very small pieces remain. Set aside.
Melt ¼ cup of the coconut oil over low heat in a large frying pan.
Add ground turkey, eggs (or plantain), onion, sea salt, and turmeric to a large bowl. Squeeze the liquid out of the vegetable mixture and add contents to the large bowl as well. Stir until evenly mixed.
Form contents into large meat patties (or smaller meatballs if desired). Fry about 5 meat patties in coconut oil. Remove to cool. Fry 5 more. Melt remaining coconut oil. Repeat until all patties are fried.
Serve topped with fresh chopped cilantro, sprinkled with sea salt, and with coconut aminos for dipping.
