Paleo Pumpkin Spice Martinis

- 6 oz (4 shots) vodka (I used Tito’s which is made from corn, but technically to be full paleo, you’d need a vodka made from paleo approved ingredients like CÎROC™)
- 1½ cups coconut milk
- 1/3 cups pumpkin puree
- 1 teaspoon pumpkin pie spice (Primal Palate’s tastes the best but you can also grab one for super cheap at Trader Joes)
- 2 teaspoons vanilla extract
- 2 tablespoons raw honey (or maple syrup or Demerara Syrup for vegan)
- 4 martini glasses (cheapest from discount stores like Ross/TJMaxx or try these with a fun twisted stem for an adorable Halloween glass)
- ¼ cup maple syrup
- ¼ cup cinnamon sugar
- Ice cubes
- Martini shaker
- Coconut whipped cream, sprinkle of pumpkin pie spice (optional garnish)
Add first six ingredients to a blender and puree.
Dip four martini glass rims into maple syrup. Then dip martini rims into cinnamon sugar.
Add ¼ of the mixture to a shaker with ice and shake. Repeat for each martini.
Pour drinks into martini glasses.
Add a dollop of coconut whipped cream (optional) and sprinkle with pumpkin pie spice.
