Servings: 1 cocktail
Hot Honey Simple Syrup
- 1/2 cup honey*
- 1/4 cup water
- 1 small jalapeno pepper, sliced (or other hot pepper of choice) *(Or you can skip the jalapenos and try a honey that is already hot, like Mike’s Hot Honey®)
Margarita
- 1/3 cup peach puree (peel a fresh peach and puree the fruit in a blender until smooth)
- 2 ounces silver tequila
- 1 ounce triple sec
- 1 ounce lime juice
- 1 tablespoon hot honey simple syrup (see above for ingredients)
- Optional splash of orange or pineapple juice (if extra sweetness desired)
- Optional rimmer: rimming salt (or I used Tajin®)
- Ice cubes
Making the simple syrup. In a small saucepan, combine all simple syrup ingredients. Heat over low, stirring frequently to dissolve honey. Cook for 10 minutes, then remove from heat and cool for 20 minutes. Use a fine strainer to strain the pepper slices and seeds.
Margarita assembly. Add to a cocktail shaker: peach puree, tequila, triple sec, lime juice, hot honey simple syrup, and optional juice. Shake for 30 seconds.
Rim margarita glasses by running a lime wedge around the edge of the glass. Twist the glass rim in a shallow bowl of rimming salt. Allow any excess rimmer to fall off. Add several ice cubes to glass. Pour margarita over top. (I do not strain it as it removes a lot of the peach flavor).
