This peach cobbler is perfect and peachy with or without the gluten. With a crisp sugar topping, warm, crumbly cobbler, and sweet juicy peaches, this summer favorite is everything you need to satisfy your love for peaches.

Gluten Free Peach Cobbler Ingredients

Peaches – The star in this sweet recipe, is of course peaches. Fresh is preferred for the taste and texture. If needed, frozen and thawed (+drained) peaches can be substituted. Canned peaches are not recommended as the texture just isn’t the same.

Baking – Most other recipe ingredients are standard baking items that are common to most household kitchens: white sugar, brown sugar, ground cinnamon, ground nutmeg, arrowroot powder or cornstarch, baking powder, and salt.

Refrigerated – you will need 1 small lemon or lemon juice and unsalted butter.

Specialty Gluten Free – The best choice for this recipe is a gluten-free 1-to-1 all-purpose flour. I prefer a gluten-free all-purpose flour without fava bean flour included (as it adds a funky taste). The difference between gluten-free 1-to-1 flours and regular flour is pretty much unnoticeable. The best tasting I’ve found so far are: King Arthur’s Gluten Free Measure for Measure Flour and Pillsbury Best Gluten Free.

Tips

  • This cobbler tastes best with fresh, in season peaches that are sweet, juicy, and ripe. Frozen can be used, but is not preferable. Canned doesn’t turn out right at all.
  • Peeling the peaches is optional and to taste. I prefer it off, but others may prefer it on.
  • The perfect size of peach slices for this is medium. If they are very thin, they will turn out mushy, and extremely thick will not cook enough.
  • The juiciness of your peaches will vary. You may need to adjust the cornstarch to desired thickness based on the juiciness of your current batch of peaches.

Storage and Reheating

I recommend storing your leftover cobbler covered in the refrigerator. It can be frozen to ensure it lasts longer, when reheating from frozen you may find it a little watery and separated, but after a stir, it will still taste delicious.

Cobbler can be stored in the refrigerator for 3-4 days in an airtight container or in the freezer for several months.

Reheating: Reheat this cobbler in the microwave or oven. If using a microwave, microwave at 30 seconds intervals until desired temperature is reached. For the oven, bake covered in foil (at 350°F) for 15-20 minutes or until desired temperature is reached. Reheating in the oven is ideal if you’d like some of the topping to return closer to its original crispness.

Dairy Free and/or Vegan Version

All you need to make this recipe dairy free, or vegan is to use vegan/dairy-free butter! Everything else is naturally vegan and dairy free.

Ingredients
  

  • 8 fresh peaches – peeled, pitted, and sliced into wedges
  • ½ cup white sugar, divided
  • ½ cup brown sugar, divided
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons arrowroot powder (or cornstarch), or extra depending on desired filling thickness
  • 1 cup 1-to-1 all-purpose gluten free baking flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled, cut in small pieces (dairy free or vegan if desired)
  • ¼ cup boiling water

(cinnamon sugar topper)

  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat oven to 425°F.
  • In a large bowl, add peaches, ¼ cup white sugar,¼ cup brown sugar, cinnamon, nutmeg, lemon juice, and arrowroot. Stir gently until combined. Add to a 2-quart baking dish. Bake for 10 minutes. Remove from oven.
  • While baking, in a large bowl, add gluten free flour, remaining white and brown sugar, baking powder, and salt. Blend in butter with a pastry blender until mixture is coarse. Stir in water until just combined.
  • Drop topping in spoonfuls over peaches.
  • Mix white sugar and cinnamon together in a small bowl; sprinkle over cobbler.
  • Bake until topping is browned/golden, about 30 minutes.
