Instructions
Cornbread is made according to the ingredients on the packaged and baked in a 9” round glass pie plate for 12-15 minutes. This typically is until full cooked and like most items that are baked; until a toothpick entered in the center of the pan comes out clean.
Meanwhile, ground beef is sautéed and seasoned. It’s then spread over the baked cornbread, followed by the remaining ingredients, in the order listed, with the exception of the cilantro and taco sauce. Bake the cornbread taco pizza for an additional five minutes to melt the cheese.

Gluten Free Cornbread Taco Pizza
Ingredients
- 8½ box gluten free cornbread mix
(I just use about ½ box from Trader Joe’s) - Other ingredients on box
- 1 cup frozen organic corn, thawed
- 1 pound organic grass fed ground beef *you can also substitute lentils for a vegetarian version
- 1 package taco seasoning
- 1 cup shredded cheese (optional, omit for dairy-free)
- 2.25 ounce can sliced black olives
- ½ orange bell pepper, chopped
- 1 tomato, diced
- 2 scallions, finely sliced (optional)
- 1 bunch cilantro, chopped (optional)
- Taco sauce
(optional)
Instructions
- Preheat oven to 400°F and make cornbread mixture according to package. Mix in corn. Spray a 9” round glass pie plate with non-stick spray, add mix, and bake for 12-15 minutes.
- Sauté ground beef according to package. Remove from heat and mix in taco seasoning.
- Sprinkle ground beef and all other remaining ingredients (with the exception of cilantro and taco sauce) on top of cornbread.
- Place pan back in the oven and bake an additional 5 minutes until cheese is melted.
- Top with cilantro and drizzle with taco sauce if desired.
