How to Make a Healthy Mimosa (well, healthier)

The best part about Watermelon Hibiscus Mimosas is that hibiscus has such a strong natural flavor and color. As a result, not as much sugar is needed (hello less hangovers and guilt). Plus, this healthy mimosa uses natural sugar for the simple syrup, real fruit juice, hibiscus, and champagne; as close to natural as you can get for a cocktail!

To make your mimosa even healthier, opt for a lower sugar champagne. The lowest sugar options for your champagne are extra brut or brut nature (these are a type or champagne – any brand will do). If you’re like me and just went to the closest cheapest place, I wound up with brut from Walmart. This was the lowest sugar option they had (extra dry is actually sweeter than brut).               

Hibiscus Cocktails & Hibiscus Simple Syrup

Hibiscus is one of my absolute favorite natural cocktail ingredients. Its beautiful natural bright red hue adds a very unique color to many recipes. Its flavor is a bright, fruity, and tart flavor; allowing the illusion of a sweeter drink while using less sugar. Plus, it is known in the wellness world for its wide variety of health benefits.

Hibiscus cocktails can be made very easily by starting with a hibiscus simple syrup (as used in the watermelon hibiscus mimosas recipe below). Just bring ½ cup water to a boil. Add hibiscus pieces, cover, and allow them to step for ten minutes. The stronger you want the flavor; the more hibiscus you add and the longer steep time you allow. Then strain, mix in your sweetener (I prefer raw honey) and refrigerate!

Once the hibiscus simple syrup is made, you can use it to create the mimosas or your own cocktail. Tequila or vodka work great as well; or another liquor/mixer of your choice. To make the mimosas, add the hibiscus simple syrup to the blender with watermelon. Blend until smooth and then strain. This mix/juice is simply added to mimosa glasses and finished with the champagne!

Ingredients
  

  • ½ cup hot water
  • 3 tablespoons raw honey or organic cane sugar
  • 3 tablespoons dried hibiscus
  • 2 cups chopped watermelon
  • 1 bottle low sugar champagne (extra brut or brut nature)
  • Champagne/mimosa glasses or iridescent mimosa glasses(make a cute party version)

Instructions
 

  • Bring water to a boil in a saucepan. Add hibiscus flowers, cover, and steep 7-10 minutes. Then strain tea. Mix in sweetener. Refrigerate until chilled.
  • Add hibiscus simple syrup to a blender with watermelon and pulse until smooth.
  • Pour through a fine mesh strainer or cheese cloth. Refrigerate until ready to serve mimosas or prepare right away.
  • Fill each champagne flute about ½ full with concentrate. Fill the rest of the way with champagne.
